The toughest seal of quality for beer. Breweries that have been awarded the Slow Brewing seal of quality know what matters when it comes to making outstanding beer. Hirt is one of currently 4 breweries in Austria to have committed themselves to Slow Brewing. We have been proud Slow Brewers since 2013 and, in the interests of quality and sustainability, are happy to undergo the strict annual audit.

Outstanding taste and a clear conscience while enjoying

Beer specialities that have been awarded the Slow Brewing seal of quality stand for this.

To award the seal of approval, Slow Brewing not only checks the quality of the beer but also the brewery that produces it.

During the annual inspection, the brewery and its production processes are closely scrutinised. Among other things, the quality of the raw materials, the type and quality of the brewing method and the quality of the company's management and culture are certified.
The strict, scientific audit comprises more than 500 questions. Every month, the taste quality of the beer is tested by the renowned Weihenstephan Research Centre (TU Munich). The beer quality of both the freshly bottled and the "aged" product is checked constantly for 12 months a year. This provides information about quality control, one of the biggest tasks for brewers. The seal of approval is only awarded if all areas have been rated as "excellent".

In Austria, we are currently one of 4 breweries to have committed themselves to Slow Brewing.

The Slow Brewing Association for outstanding beer quality shares a passion for the real thing. It acts in the conviction that beer lovers want more – not a one-size-fits-all taste, but outstandingly good, real beers and outstanding breweries that approach their task with full awareness: beer as a means of enjoyment for quality of life, with the best taste and a really good feeling when enjoying it.

Gentle beer production

Taking time to brew is the philosophy behind Slow Brewing. Unlike with accelerated industrial mass production, slow brewers are committed to slow fermentation and gentle maturation. And for good reason: in addition to using the purest natural raw materials, it is above all the time factor that ensures the taste and wholesomeness of the beers. Certified Slow Brewers know what they are doing. For outstanding beer, they combine traditional brewing methods with the highest brewing know-how and state-of-the-art production technology.

Pure, natural and traditional brewing

Slow Brewers produce quality of life. With outstanding beers and conscious action with integrity:
consciously in the sense of the environment and its region, consciously in the sense of future generations and consciously in the sense of fair cooperation with employees and all those involved in the production process.

Slow Brewers love and protect the Real Thing

This starts with the pure ingredients and ends with brewing specialities with individuality. Regional roots always play a key role. Slow Brewers live their passion for outstanding beer completely independently of corporations and their specifications. This protects against uniformity of taste and ensures the diversity that beer lovers desire.

What distinguishes Slow Brewers from other breweries?

Beer specialities that have been awarded the Slow Brewing seal of quality stand for outstanding taste and a clear conscience when enjoyed. The slow and gentle brewing method, the use of the purest, natural raw materials and the ideal maturation time have a particular effect on the taste of Slow Brewing beers. Preservatives, enzymes and additives are dispensed with completely. High Gravity Brewing is an absolute no-go. With this type of brewing, the finished beer is later diluted (dilution of concentrated beer to the variety's typical drinking strength).

Slow Brewing goes beyond checking beer quality and also judges the brewery. Only companies that act fairly and consciously in all areas of their value chain are certified.

There are currently 29 certified Slow Brewing breweries. Four of them come from Austria, the rest from Germany, Italy and Switzerland.
