We have been brewing with real passion at Hirt since 1270. A lot has changed in the art of brewing beer over the past 750 years as well as at Hirt Private Brewery. New recipes and new methods have been developed to obtain new flavours and create a special range. What is at the core of us and our Hirt beer, however, has remained unchanged over the centuries and can be summed up today, as it was then, in our five pillars of quality for real beer: a sense of tradition, regionality, the best natural raw materials, a genuine passion for brewing beer and, of course, professional craftsmanship.
Our brewers have always played a key role in this regard. Because their special sense of smell, visual acuity and taste are what makes the craft of brewing beer a masterful art that cannot be replaced by any machine. From the daily laboratory sampling of the water, to the brewhouse work, to the tasting of the finished brewed beers, there are many different work steps that are characterised by craftsmanship as well as extensive knowledge and experience, because even the smallest mistakes would have serious consequences for the quality and taste of the beer. However, none of this runs contrary to technical innovations and modernisations. These must not be equated with mass production and artificial processes, but can also contribute significantly to high quality and efficient processes in a natural way.
